Ingredients:
- 3 C cooked brown rice
- 1 Granny Smith apple, diced
- 2 celery stalks, finely chopped
- 1 red pepper, chopped
- ¼ bunch green onions, chopped
- ½ C 'We Are Nuts' walnut pieces
- 1 C cooked chicken, cubed
- 3 Tablespoons leaf parsley, chopped
- ¼ C apple cider vinegar
- 2 Tablespoons lemon juice
- 3 Tablespoons olive oil
- Salt and pepper
Directions:
- In a mixing bowl, combine all ingredients and toss. Serve at room temperature or chilled.
