Ingredients:

  • 3 C cooked brown rice
  • 1 Granny Smith apple, diced
  • 2 celery stalks, finely chopped
  • 1 red pepper, chopped
  • ¼ bunch green onions, chopped
  • ½ C 'We Are Nuts' walnut pieces
  • 1 C cooked chicken, cubed
  • 3 Tablespoons leaf parsley, chopped
  • ¼ C apple cider vinegar
  • 2 Tablespoons lemon juice
  • 3 Tablespoons olive oil
  • Salt and pepper

Directions:

  1. In a mixing bowl, combine all ingredients and toss.  Serve at room temperature or chilled.
