Ingredients:

  • ¼ C vegetable oil
  • 2 C diced chicken meat
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 cloves garlic, diced
  • 3 C chicken broth
  • 2 Tablespoons soy sauce
  • 2 Tablespoons oyster sauce
  • 1 C chopped celery
  • 1 (8 oz) can bamboo shoots, drained and diced
  • 1 (8 oz) can water chestnuts, drained and diced
  • 1/3 C cornstarch
  • ½ C cold water
  • 1 C 'We Are Nuts' cashews

Directions:

  1. Heat oil in a large skillet over medium high heat.  Saute garlic and chicken,  until chicken turns white, then season with salt and pepper.  Add broth, soy sauce, celery, bamboo shoots and water chestnuts.  Cover skillet, reduce heat to low and simmer for 5 minutes.
  2. Beat cornstarch and water together in a small bowl, then blend into skillet mixture.  Heat through until thick and bubbly.  Sprinkle with cashews and serve. 
  3. Serves 6.
  4. Goes great served over rice!
