Ingredients:

  • 1 c. pitted chopped dates
  • 1 c. chopped walnuts
  • 1 ½ t. baking soda
  • ½ t. salt
  • 3 T. vegetable shortening
  • ¾ c. boiling water
  • 2 eggs
  • ¾ c. granulated sugar
  • ½ c. whole wheat flour
  • 1 c. all-purpose flour 

Directions:

  1. Prep Time: 25 minutes
  2. Cook Time:  50 minutes
  3. Preheat oven to 350.
  4. Grease an 8 ½ x 4 ½ x 3 inch loaf pan.
  5. Put the dates, walnuts, baking soda, salt & shortening in a bowl.  Pour the boiling water over & stir.  Let the mixture stand for 15 minutes.
  6. Using a fork, beat the eggs & sugar together in a bowl.  Add flours & stir.  The batter will be too stiff to mix well.  Add the date mixture & mix briskly until batter is well blended.  Spoon into the loaf pan & bake 40 to 50 minutes.  Check the loaf often, it is done when a few moist crumbs cling to a straw inserted into middle of the loaf.  The bread will continue to bake after removed from oven.  Do NOT over bake, or loaf will be dry.
  7. When loaf is done, slide a knife around the edges of the pan & turn the loaf onto a rack to cool completely.  This bread freezes well.
